Key dates in the Alain Ducasse
and the Ducasse Paris group timeline

Over the past 30 years, Alain Ducasse and the Ducasse Paris group have developed a unique savoir-faire that illustrates in many forms the arts of living well and eating well which are so prominent in French culture. With a range of restaurants, manufactures, hotel and restaurant establishments, culinary training schools and a culinary publishing house, Chef Alain Ducasse’s curiosity knows no limits. The world inspires him and he embraces its cultural wealth and diversity.

1987

Alain Ducasse in Monaco

Alain Ducasse takes over management of the Louis XV restaurant in Monaco. The restaurant is awarded three Michelin stars three years later.

L'Abbaye de la Celle et la Bastide de Moustiers

1995

Opening of the Bastide de Moustiers, Alain Ducasse’s first hotel and restaurant in Provence, a region close to his heart. The establishment is awarded a Michelin star in 2002.

1996

Alain Ducasse in Paris

Alain Ducasse takes over the restaurant of the Hôtel Le Parc located at 59 avenue Raymond Poincaré in the prestigious 16th arrondissement of Paris, formerly run by Joël Robuchon.

Ducasse Paris Manufacture et ouverture Sapid

1998

  • Alain Ducasse becomes the only chef to have ever obtained 6 Michelin stars: 3 stars for the Alain Ducasse restaurant at the Hôtel Le Parc in Paris, and 3 stars for the restaurant Le Louis XV at the Hôtel de Paris in Monte Carlo.
  • Opening of ‘Spoon, Food & Wine‘ in Paris, the capital’s first restaurant to offer multicultural cuisine.

1999

  • Alain Ducasse decides to bring the Abbaye de La Celle back to life as a hotel and restaurant in the small village of La Celle-en-Provence in the Var region of south-west France.
  • Creation of Ducasse Education, the training division of the Ducasse Paris group.
Alain Ducasse au Plaza Athénée, Aux Lyonnais

2000

  • Alain Ducasse in the United States

    Opening of the restaurant ‘Alain Ducasse at the Essex House‘ in New York, which goes on to be awarded 4 stars by the New York Times in 2001.

  • Alain Ducasse moves his Parisian restaurant from avenue Raymond Poincaré to the Hôtel Plaza Athénée, which is awarded 3 Michelin stars in March 2001, just five months after opening.

2001

Creation of the Alain Ducasse Entreprise group.

2002

Beginnings of the bistro spirit by Alain Ducasse

Alain Ducasse takes over the ‘Aux Lyonnais‘ in Paris, a bistro serving typical dishes based on Lyon’s culinary traditions.

2004

Alain Ducasse in Japan

Opening of ‘Beige‘ in Tokyo, offering contemporary French cuisine with Japanese influences. The establishment is awarded 2 Michelin stars in 2016.

Restaurant Beige, Tokyo

Opening of Mix in Las Vegas on the top floor of THE Hotel at Mandalay Bay. The restaurant is renamed Rivea Las Vegas in 2015.

Benoit Paris

2005

  • In 2005, Alain Ducasse becomes the only chef to have been awarded 3 Michelin stars at 3 different restaurants, in Monaco, Paris and New York.
  • He takes over the Michelin-starred bistro ‘Benoit Paris‘ in Paris.
  • Opening of a second restaurant in Japan, Benoit Tokyo. The establishment is awarded a Michelin star in 2016.

2006

  • Ducasse Conseil creates the meals for the astronauts aboard the ISS, in partnership with the French national space agency CNES.
  • Alain Ducasse takes over the concession for restaurants at the Eiffel Tower.
Alain Ducasse at The Dorchester, Yssingeaux, Benoit New York

2007

  • Alain Ducasse in England

    Opening of the restaurant Alain Ducasse at The Dorchester in London. The establishment is awarded 3 Michelin stars in 2010.

  • DUCASSE Education takes over the École Nationale Supérieure de Pâtisserie in Yssingeaux with Chef Yves Thuriès.

2008

  • The bistro Benoit opens in New York.
  • New visual identity for the Ducasse Paris group.
Ecole de cuisine, Salon La Premiere Air France, Collège Culinaire de France

2009

  • The Ecole de Cuisine Alain Ducasse opens in central Paris, for all culinary enthusiasts.
  • Alain Ducasse signs the menu for the La Première Air France Salon at Roissy-Charles de Gaulle airport.

2011

The Collège Culinaire de France opens, presided over by Alain Ducasse and Joël Robuchon. It is an association designed to promote and transmit the values of French gastronomy, and to become a ‘privileged spokesbody’ working with the public authorities.

2012

Alain Ducasse in the Middle East 

Opening of the restaurant IDAM Alain Ducasse on the top floor of the Museum of Islamic Art in Doha.

2013

Creation of the Manufactures

Opening of the Manufacture de Chocolat Alain Ducasse in Paris where chocolates are handcrafted using traditional methods, from the initial cocoa bean roasting to the final product.

  • Alain Ducasse takes over the bistro ‘Allard‘ in Paris.
  • Opening of the restaurant Le Meurice Alain Ducasse. The establishment is awarded 2 Michelin stars in 2016.
ore - Ducasse au château de Versailles, Livre Naturalité

2014

Reopening of the restaurant Alain Ducasse au Plaza Athénée where Alain Ducasse launches Naturalness cuisine based on the three fundamentals of vegetables, fish and grains. The ‘Naturalness’ campaign runs until 30 June 2021.

2016

Opening of the contemporary café Ore – Ducasse au Château de Versailles.

Ducasse sur Seine, Manufacture de Chocolat Alain Ducasse au Japon, Alain Ducasse at Morpheus

2018

  • Inauguration of the first fully electric restaurant boat on the River Seine, named Ducasse sur Seine.
  • Opening of the Manufacture de Chocolat Alain Ducasse in Japan.
  • Opening of the restaurant Alain Ducasse at Morpheus in Macau. The establishment is awarded 2 Michelin stars in December 2018.
  • Opening of ‘Cucina Mutualité‘ in Paris, Alain Ducasse’s new Italian restaurant.
  • Opening of the first Le Chocolat Alain Ducasse store in London.

2019

Opening of Esterre in Tokyo. The establishment is awarded a Michelin star in 2020.

Esterre
  • The Manufacture de Café opens to the public, situated on rue Saint Sabin, close to the Manufacture de Chocolat.
  • Opening of Jiwan at the National Museum of Qatar.
  • Opening of Blue by Alain Ducasse in Bangkok.
  • Strategic alliance between Ducasse Education and Sommet Education to develop the Ecole Ducasse network in France and worldwide.

2020

Opening of the Ecole Ducasse Paris Campus in Meudon.

  • Opening of Muni Kyoto (2 restaurants: La Terrasse and Muni Alain Ducasse) – La Terrasse and Muni Alain Ducasse are each awarded a Michelin star in 2021.
  • Opening of Benoit Kyoto.
  • Strategic alliance between Ducasse Paris and the Mirabaud Patrimoine Vivant investment fund to develop the Manufactures.
Ducasse Paris Manufacture et ouverture Sapid

2021

  • Opening of the Manufacture de Glace, again in the 11th arrondissement of Paris, to produce ice creams ready to serve.
  • Opening of Sapid, Alain Ducasse’s pesco-vegetarian refectory in the 10th arrondissement of Paris.
  • Opening of the Alain Ducasse restaurant at the Château de Versailles: Le Grand Contrôle (Airelles Collection).

2022

Opening of the Manufacture de Biscuit in Paris on rue de la Roquette, with a view to putting a new twist on this iconic product.

Ducasse Paris - Notre histoire

2023

  • Opening of the Manufacture de Chocolat in Munich.
  • To mark the 10th anniversary of Le Chocolat Alain Ducasse, inauguration of a new Manufacture in Paris to continue producing 100% of our chocolate in the traditional, artisanal way
  • Opening of the Ecole Ducasse Abu Dhabi Studio, in the United Arab Emirates.

2023

  • Alain Ducasse in Italy

    Opening in Naples of the Il Ristorante Alain Ducasse at ROMEO Napoli restaurant.

  • Apsys and Ducasse Paris lay the foundation stone for the Maison du Peuple in Clichy, which will become the showcase for the Group’s expertise in 2025.
  • Announcement of the collaboration between Ducasse Paris and Baccarat, to design the new gastronomic offering of its house on the Place des États-Unis.
